Dlf Restaurants is up here in Shimla, and the air is much thinner and colder than in the plains. This really changes how we do things every day. We are located in the 171213 area of Himachal Pradesh. It’s a tourist town, so we see a lot of people who are just passing through for the weekend or a quick holiday. The kitchen gets busy when the weather is nice and the town is full of visitors. We have to bring in most of our supplies from down the mountain, which can be a real headache when there’s a landslide or heavy snow blocking the roads. Our staff is mostly local guys who know the area well and don't mind the cold. The restaurant isn't some fancy high-end place; it’s just where you go to get a warm meal and sit for a bit. We spend a lot of time cleaning the fog off the windows so people can see the mountains outside. The floors are wooden and they creak quite a bit when you walk on them. We don't have a big marketing team or anything like that. We just open the doors and start cooking every morning. Sometimes the power goes out and we have to use candles, which the customers seem to like even if it’s a bit of a mess for us in the kitchen. It’s a simple life up here in the hills, just serving food to whoever walks in the door and needs a seat.
