Inderjeet Singh Dangwal runs things here at A8/7 Dayalpur, over in the Tukmirpur Extension. It’s a restaurant that focuses on grilling, so there’s usually a bit of smoke in the air and the smell of spices. We start pretty early in the day getting the meat ready and making sure the grills are clean. It’s hot work, especially in the Delhi summers, but you get used to it after a while. The kitchen is always busy with someone chopping vegetables or checking the fire. We aren't a big chain, just a local spot where people come to eat when they want something different from the usual home food. The seating area is simple, just tables and chairs that we wipe down a hundred times a night. On the weekends, it gets really crowded and the noise from the kitchen and the customers all blends together. Sometimes we run out of a certain dish because we only buy what we need for the day. It’s better that way so things stay fresh. The street outside can be a bit dusty, but once you’re inside with the food, it doesn’t matter much. We just focus on getting the orders out right. It’s a lot of hard work on your feet all night, but seeing people finish their plates is good enough for us.
