We are based at Hotel Broadway on 11 M.A. Road in Srinagar, Kashmir. Being on M.A. Road means we are right in the middle of a lot of history and activity. The building has been around for quite some time, and it has that classic look you find in this part of Srinagar. We work in the kitchen area mostly, as Commi 1 implies a certain kind of role here. It gets quite cold in the winters, but the kitchen is always warm. We spend long hours prepping food and making sure the station is clean. It’s hard work on your feet all day, but we are a good crew. We don't talk like those fancy chefs on TV. We just get the plates out. The view outside toward the road is always changing with the seasons. Sometimes the snow piles up high, and other times it’s bright and sunny. We source things locally when we can, and we know the vendors at the market down the street. It’s not a glamorous life, but it’s our life. We drink a lot of Noon Chai during our breaks. The hotel itself has its own rhythm, and we are just one part of it. We don't have a big mission; we just want the food to taste right. It’s a busy, noisy, and often messy place to work, but we like it here on M.A. Road.
