Colonel'S Kababz

So, we’re located over in Ragubir Nagar, specifically at C 218. It’s right in the Rajouri Garden area. Most people know it can get pretty crowded around here. Colonel'S Kababz has been around for a bit, and we basically just focus on the food. We aren't trying to be some five-star place with white tablecloths. It’s more about the smell of the grill and getting things out to people who are hungry. The kitchen gets really hot, especially in the Delhi summers. We spend a lot of time prep work, cutting onions, and making sure the charcoal is right. It’s a lot of work that people don't see. Sometimes we run out of things if the market was slow that morning. We just tell the customers and they usually understand. It’s a family-run kind of vibe, even if we aren't all related. We’ve had the same guys working the tandoor for a long time. The shop isn't huge. You might have to wait a bit if it’s a Friday night. We try to keep the place clean, but with all the soot and grease, it's a constant battle.
