We are located in New Ashok Nagar, specifically B1102. If you know Delhi 96, you know how the buildings are all packed in together. It is basically a home kitchen setup that turned into something more for Chef Tranier. Most days, the counters are covered in flour or chopped onions. We do not have a giant commercial space with stainless steel everything. It is more personal than that. You can hear the neighbors and the street noise while we are working on recipes. Sometimes we run out of space when a few people are here learning. It gets a bit hot in the summer because the ventilation isn't like a big hotel. We spend a lot of time talking about how to handle the heat and the knives. It is just practical stuff. Nothing too fancy. When we aren't teaching, we are usually cleaning up or trying out a new dish that didn't quite work the first time. The floors are a bit worn down from all the walking back and forth. New Ashok Nagar has its own vibe, very busy and a bit chaotic at times. We fit right in there. It is just about the food and getting it right. We keep our supplies tucked into every corner we can find. It is a tight squeeze but it works for what we do here. Sometimes the power goes out and we just wait it out with a cup of tea until things get back to normal.
