Manish Negi started this place in Nathuwala because he wanted something close to home in Manav Vihar. We are just a small kitchen really, tucked away in this part of Dehradun where things are still a bit quiet compared to the main city center. Most days start early with getting the stove going and checking what we have in the pantry for the day's cooking. It is not a fancy setup by any means. We have some basic tables and the walls could probably use a fresh coat of paint if we ever get around to it. People from the neighborhood usually just drop by or call us up when they don't feel like cooking at home. It gets pretty humid here in Uttranchal during the monsoon months and that makes the kitchen quite hot but we just keep the fans running and get on with it. Sometimes the delivery guys get lost looking for the specific lane but most people around here know where we are. We don't have a big team or anything, just a few of us making sure the food is ready on time. We use whatever ingredients we get from the local market that morning so things change depending on the season. It is a simple life running a food business here. We just try to keep the place clean and make sure the cooking is done right for whoever comes through the door in this little corner of D.Dun.
