Chef Indian And Tandoor

We are located at C-577 in Defence Colony, which is a pretty well-known part of New Delhi. Chef Indian And Tandoor has been operating from this spot for a while now. The street is usually lined with cars and the houses here are all quite close together. You can usually tell you are near our place because of the smell of the charcoal and the spices from the tandoor. It’s a busy kitchen environment. In the mornings, things are a bit chaotic as we get the supplies delivered and start the prep work for the day. There are crates of onions and sacks of flour being moved around. The walls have some soot on them from the ovens, and it gets really hot in the back where the cooking happens. We don't have a lot of fancy decor; the focus is mostly on the large clay ovens and the stainless steel counters. The staff is always moving, trying to stay ahead of the orders. Outside, the neighborhood is a mix of people going to work and local residents walking their dogs. It’s a lively area, and being in the C-block means we see a lot of the same faces every day. We just keep the fires going and handle the rush as it comes. It is a lot of hard work and sweat, but that is just how a real kitchen in Delhi operates. It is noisy and hot, but it’s where we spend our days.
