Chef In Tk'S In Hyatt Regency,New Delhi

I work as a chef over at TK's which is inside the Hyatt Regency in New Delhi, but I actually live out in Pitampura at Qu-204 C. It’s a long commute some days, but that’s just how life in Delhi goes. Being a chef means I spend most of my time in a hot kitchen, dealing with grills and knives and a lot of loud noises. TK's is known for the Japanese style of cooking where we stand right in front of the people, which can be pretty tiring on the legs. When I’m not at the hotel, I’m back at my place in Pitampura trying to relax. The neighborhood there is a bit quieter than the busy hotel area. I’ve been doing this for a long time, starting from the bottom and learning how to handle the rush. It’s not always glamorous like it looks on television. There is a lot of cleaning up grease and prepping vegetables before the first guest even walks in. My hands have a few scars from burns and cuts over the years, but that’s part of the trade. I don’t think about it too much. I just focus on the food and making sure the station is ready for the night service. It’s a lot of hours on my feet, but it’s what I know how to do. Sometimes the ingredients aren't perfect and we have to fix things on the fly.
