If you head over to Punjabi Mohalla in Zamrudpur, you’ll find us sitting at number 39. We are right there in the Greater Kailash-1 area of New Delhi, which stays pretty busy most nights. Running Chaska Fine Dine Restro Bar is a lot of work, from setting up the tables in the afternoon to making sure the bar is stocked before the evening crowd starts trickling in. It’s a local spot where people from the neighborhood come to grab a bite or have a drink after work. The kitchen stays hot and noisy, with our cooks juggling different orders all at once. We don't really do anything too flashy, just standard dining and a place to sit down. Sometimes the music is a bit loud, or we run out of a specific brand of beer, but we just deal with it and keep going. The staff here has been around for a bit, so they know the regulars by name. It’s funny how a restro-bar becomes a part of the local scenery over time. We see the same faces every Friday night. Cleaning up at 1 AM is probably the hardest part, but it’s just what comes with the job. Being in Kailash Colony means there’s always something happening outside our doors. We just keep the lights on and the food coming. It’s a real place with real people working hard every single day to keep it going.
