Cafe Coffee Day, (Airline Operations)

We run the airline operations side of things from Flat No. 897 in the DA Flats in Gulabi Bagh. It might seem a bit unusual to have an office in a residential flat, but it works for us. We handle all the logistics for the coffee and supplies that go onto the flights. My desk is usually covered in flight schedules and inventory lists. We have to make sure every plane has what it needs before it leaves the ground, so the timing is always very tight. It is a lot of coordination and phone calls to the airport. Since we are in Gulabi Bagh, it is relatively quiet compared to the airport itself, which helps us keep our heads straight. We are not a cafe where you can sit and drink a latte; we are the ones making sure the coffee beans and cups actually get to the galley. The flat is filled with boxes sometimes, especially when a new shipment comes in. We start our work very early in the morning because the airline industry never really sleeps. It is a lot of responsibility and we have to be very careful with the details. We have been doing this for a long time now and we have our own way of making sure everything gets delivered on time. It is just a practical, busy office in a quiet corner of Delhi.
