Our place, Bercos, is located at C-10/143 in Yamuna Vihar. It’s a spot where people come when they want a meal out. We’ve got the kitchen in the back and the tables out front. It’s not a massive dining hall, just a regular-sized restaurant for the neighborhood. We spend a lot of time prepping vegetables and making sure the stove is ready to go. The smells of the cooking are everywhere. Sometimes it gets really hot in the kitchen, especially when we’re busy on a weekend night. We have a few waiters who have been with us for a long time. We don't have any fancy speeches about our food. We just cook it and serve it. People from Yamuna Vihar know where we are. We see kids growing up and coming back as adults. The decor is simple, nothing too flashy. We’ve got some chairs that might squeak a bit and the floor gets worn down from all the walking. We just keep it as clean as we can and focus on the orders. It’s a lot of work to keep a restaurant going day after day. We don't have a big corporate office; the owner is usually right here by the cash counter. It’s just a local business trying to keep people fed. We don't pretend to be anything more than a neighborhood eatery. It’s what we do, and we’ve been doing it a while.
