You can find us at Bawarchi Tolla on the second floor of the LIG Flats in East Loni Road. It’s unit C-972. Being on the second floor means we have to carry everything up the stairs, which keeps us moving. The kitchen is where all the action happens. It’s usually hot and smells like spices and fried onions. East Loni Road is a loud, busy place with rickshaws and trucks constantly going by. Our flat isn't very big, but we’ve managed to fit all the stoves and pots we need to get the cooking done. We mostly focus on the food and don't worry much about how the walls look. There are always sacks of rice and flour stacked in the corner. We start early in the morning when the air is still a bit cool. By noon, the whole place is buzzing. It’s a lot of hard work, chopping vegetables and stirring big pots for hours. We don't have a fancy storefront with glass windows. People mostly know us because they live in the flats or work nearby. The neighborhood is crowded, but everyone knows everyone else. Sometimes the water pressure is low, so we have to fill up buckets in advance. It’s a humble setup, but we like being part of the daily life here in Delhi. It’s honest work and it keeps us busy from dawn until late at night. We just try to make decent food for the people who come to see us.
