Our kitchen is located over at Ghitorni, specifically at the spot looked after by Bharat Lohiya. Baujee Ka Dhaba is part of Annapurna Restaurants Pvt.Ltd., but it feels more like a local kitchen than a big company. We are in Delhi 110030, which is a busy area with a lot of people moving through. The smell of spices is always in the air around here. We spend most of our time prepping vegetables and making sure the stoves are ready for the rush. It’s a lot of hard work and it gets very hot in the back, but we’re used to it. We don't have a fancy dining room with soft music. It’s more about the food and getting it out to people who are hungry. The staff here works long hours, especially during the dinner time when everyone wants their food at once. We sometimes trip over each other in the small space, but we’ve learned how to move together. We don't use a lot of fancy words to describe what we do. We just cook things the way we were taught and hope people enjoy the meal. There are no big marketing plans here. We just rely on the fact that people know where we are and what we serve. It's a simple, honest kitchen in a busy part of town. We just keep our heads down and cook.
