Bakery Confectionery Hod

Our bakery is right in the Buta Singh Building at Khyber Pass in the Civil Lines area. It is an old part of Delhi, and the building itself has a lot of history to it. We have been at number 26 for quite some time now. Every morning starts very early, usually while it is still dark outside, so we can get the ovens going before the sun comes up. We make bread, biscuits, and various sweets that people like to have with their tea. It is a lot of flour and sugar everywhere, and the smell of baking stays in the air all day. We are not a big factory; it is mostly manual work with a few machines to help us out. The staff knows the regulars who come in every morning for their daily bread. Sometimes we run out of certain items by the afternoon if it has been a busy day. The shop is small and can get a bit crowded when the school nearby lets out and the kids come looking for snacks. We do not do anything fancy with our packaging, just simple bags and boxes for the customers. It is hard work being on your feet all day in the heat of the kitchen, but it is what we know how to do. Civil Lines is a nice area, and we like being tucked away here in Khyber Pass. We just keep our heads down and keep the ovens hot for the next batch. It’s a simple life.
