If you look for us in R.K. Puram Sector 2, you’ll find us tucked away at Room No. 682. It’s a bit of a strange spot for an Italian restaurant, being in this building, but we make it work. Manish Bahuguna is usually around, making sure things don't fall apart in the kitchen. We spend most of our mornings chopping tomatoes and getting the dough ready for the day. It gets hot in there, especially when the ovens have been running for hours. We aren't trying to be anything fancy or like those big places in the malls. We just make food that we’d want to eat ourselves. The smell of garlic hangs around the hallway most of the time. Sometimes the neighbors complain, but mostly they just come in to see what’s cooking. It’s a small space, so things get cramped when more than three people are working at once. We’ve got a couple of tables that have seen better days, but they do the job. My hands usually smell like herbs by the end of the shift. It’s a lot of washing dishes and making sure the orders go out right. We don’t have some big philosophy about it, we just like how the pasta looks when it’s fresh. It’s a quiet life in this part of Delhi, and we’re just glad to be here.
