As A C.D.P. Indian Curry

We are located at Vatika Grand, which is right near Leisure Valley Park in Sector 29, Gurgaon. This area is the heart of the food scene here. Our kitchen is always warm and smells like onions and spices. Being a Chef de Partie for the Indian curry section means I spend my whole day over the stoves. The kitchen is tucked away in the back of the building. It’s not a quiet place. You have the sound of exhaust fans, knives hitting boards, and people shouting orders. We get a lot of people coming in after they finish walking in the park. The rush starts in the evening and doesn't stop until late. We have stainless steel counters and big pots that are always simmering. It’s hard work and your feet hurt by the end of the shift. The floor gets slippery so we have to be careful. We take our breaks out by the back door where there is a little bit of shade. Sector 29 is always crowded with cars and people looking for a place to eat. We don't see much of the outside world once the shift begins. We just focus on the gravy and the bread. It’s a tight space with several of us working side by side. We know each other's moves so we don't bump into one another. It's just how the kitchen life goes every single day.
