Our kitchen is tucked away in the backside of Pandav Nagar at C-160/161. If you know the area, you know it can get pretty crowded, but we’ve found our rhythm here on the first floor. Every morning starts with the sound of crates moving and the smell of whatever we are prepping for the day. It’s a lot of chopping, stirring, and packing things up to go out. We aren't a big flashy restaurant where people sit down and eat; it’s more about the behind-the-scenes work of getting food ready. The space is tight, so we all have to watch our step and stay out of each other's way while the ovens are going. Some of us have been working in this kitchen for years, so we’ve seen the neighborhood change a lot around us. We deal with suppliers coming in and out through the back all day long. It gets hot in there during the summer months, but we just keep the fans going and get on with it. There’s always a list of orders to fill and clocks to watch to make sure everything stays on schedule. We don't put much stock in being fancy, we just care about getting the cooking done right and making sure nothing goes to waste. It’s a plain, hardworking environment every single day. We are just a group of cooks doing our thing in a small part of Delhi.
