Uk Mushrooms India is situated over in Imli Kheda, which is a village area near Roorkee. We operate out of Ninha’s place. Growing mushrooms is a bit different from regular farming because you don't need big open fields. We spend a lot of time in the dark, actually. Mushrooms need that cool, damp environment, so we have these specialized rooms set up. It’s a lot of work to keep the temperature and the humidity just right. If it gets too hot or too dry, the whole crop can be ruined in a day. We’re constantly checking the bags and the trays. Ninha has been doing this for a while and knows the signs of a good growth cycle. We’re not a big factory; it’s more of a home-grown setup that’s expanded over time. The village of Imli Kheda is a quiet place, which is good for this kind of work. We have people from the local area who come in to help with the harvesting and the packing. It’s delicate work because you don’t want to bruise the mushrooms before they get to the market. We don't have a lot of fancy machinery, just a lot of shelves and some fans to keep the air moving. It’s a strange way to make a living, maybe, but we’ve grown to really like it and we keep things simple here.
