Madras Murthy Appalam

We are over at 53-B, Rajaji Road in the Ramnagar area. It is a place where we make appalams every day. The work starts early in the morning when the sun is still coming up because we need that light for drying. Making appalams isn't really complicated, but it takes a lot of patience to get the dough right and thin enough. We have a few people helping out with the rolling and the stacking. Most of our day is just spent checking if things are dry or moving bags around the small space we have here. Ramnagar is a decent neighborhood and people around here know us for being at this spot for quite a while. We don't have a big fancy office or anything like that, just our workspace where the magic happens, if you can call it that. Sometimes the weather doesn't help much, especially when it rains and we can't dry the appalams outside properly. Those days are a bit slow and we just sit around and talk. We get our supplies from the local markets and try to keep things moving as much as we can. It is a simple life and a simple business. We just pack them up and send them out to whoever needs them. Nothing much more to say about it, really. It is just us doing what we know how to do in our little corner on Rajaji Road.
