About M K Roll Corner – Engineering in Central Delhi
M K Roll Corner is a small spot at Alipur Road, Civil Lines 6. We don't have a lot of space, just enough for the tawa and a place for people to stand. It’s mostly about the rolls. We spend the whole day chopping onions and peppers. The knife makes a steady clicking sound on the board. Alipur Road is usually busy with students and office workers. They are always in a hurry. We try to get the rolls wrapped in paper as fast as possible. The heat from the big flat pan is always there. In the winter it feels good, but in the summer it can be tough. We don't have fancy menus with photos. It’s just a list on the wall. The apron gets stained by the end of the shift with oil and sauce. That’s just part of the job. Civil Lines 6 is a decent location, though the sidewalk gets narrow right in front of us. We have a small trash can outside that we have to empty multiple times a day. We aren't trying to be the biggest chain in the city. We are just M K Roll Corner. Most people find us by the smell of the spices cooking on the grill. It’s a straightforward life. We open the shutter, cook until the dough is gone, and then go home. It’s been this way for a while now and we don't expect it to change much.
