You can find us in Pawanpuri, right near the Nagnechi Mandir. It is a nice spot in Bikaner, and the temple brings a lot of people by. We do a mix of things here, mostly focusing on food and setting things up for events. It is a lot of work coordinating the kitchen and the decorations at the same time. The kitchen is always busy, smelling like spices and steam. We have big pots and pans that need constant cleaning. On the event side, we are always counting plates and making sure the linens are clean. It is not always glamorous. Sometimes we are up at 4 AM to start the cooking for a morning function. The Bikaner wind can be a real pain when you are trying to set up an outdoor buffet. We have had plates fly away before, so we have learned to weigh everything down. Our office is small, just enough space for a desk and some chairs where people sit to talk about their menus. We do not have a big corporate team. It is mostly family and a few workers who have been with us for years. We know the local tastes around here. People like their food a certain way in Pawanpuri. We just try to keep up with the orders and make sure the food is hot when it reaches the table. It is a hectic business, but it keeps us busy every single day of the week.
