Being over here at Dnyaneshwar Paduka Chowk on F C Road in Shivajinagar means it is always busy outside. There is a lot of noise from the street, and people are always rushing somewhere in this part of Pune. Our kitchen is small, so it gets pretty crowded when we have all the steamers going at once. We spend the whole day folding dough and getting the fillings ready. It is a lot of repetitive work, but you get used to it after a while. Most of our customers are students or people out shopping who just want something quick they can eat while standing up. We do not have much space for sitting, so it is usually a grab-and-go kind of situation for everyone. The spicy chutney is something we make in big batches because people always ask for extra. Sometimes the line gets a bit long and we have to tell people to wait for a fresh batch, but usually, we move pretty fast. It is a bit chaotic during the evenings when the sun goes down and the street lights come on. We stay open late enough to catch the last of the crowds heading home. It is not a fancy setup, just a practical place to get a meal. We have been at this spot for a bit now and know the rhythms of the road. It is just us and the steam from the pots every single day.
