If you walk down JP Nagar 41, you will probably find us by the steam coming off the big pots. Waah Biryani is just a small spot, nothing too elaborate. We start early in the morning, getting the rice and meat ready before the sun gets too high. The kitchen is small, so we have to be careful not to bump into each other when we are moving those heavy containers. Most of our time is spent just watching the timers and making sure the spice levels are consistent. JP Nagar is a busy area, and the traffic outside never really stops. We get a lot of people stopping by on their way home from work, looking for something quick to take back. The bags are always lined up on the counter. We don't have many tables, so it's mostly people standing around or taking food away in those silver foil packs. Sometimes we run out of certain items earlier than we thought, and we have to tell people we're closing up for the night. The floor gets a bit greasy by the end of the shift, so we spend a good hour scrubbing it down once the shutters are closed. It is a lot of repetitive work, but we are used to it by now. The smell of the spices sticks to our clothes even after we go home and wash up for the day.
