Our little place, Swadh Desi, is tucked away in JP Nagar 60. It’s a small shop, mostly filled with the smell of whatever we happen to be cooking that hour. We don’t have a big staff, just a few of us who have been working together for a long time. Every day is pretty much the same routine. We get the vegetables delivered in the morning, and someone spends a few hours just chopping and getting everything ready. The kitchen is small, so we’re always bumping into each other, but we’ve gotten used to it over the years. We didn't spend much on the decorations. There are some plain tables and some fans that work most of the time. The floor is easy to clean, which is good because it gets messy when we’re busy. People from the nearby houses walk over when they don't feel like cooking. We know most of them by name now. It’s a bit of a walk from the main road, but people find us anyway. Sometimes we run out of things before the day is over, and we just have to tell people we're done for the night. We aren't trying to be the biggest place in the city. We just want to make sure the food tastes like it should and that we can pay the bills at the end of the month. It's a lot of hard work, and we are usually pretty tired by the time we lock up.
