We are located in Banashankari, which is a busy area with a lot of people moving around. The shop is right on a corner, so we get people coming from both sides. It’s not a very big place, so most people just stand and eat at the high counters. We have those stainless steel tops that we have to wipe down every few minutes because things get spilled quite often. The floor is usually a bit wet near the washing area. We start very early in the morning, around five, to get everything ready for the first wave of people. You can hear the sounds of the neighborhood waking up while we are setting out the bins. We have a big clock on the wall that ticks very loudly when it’s quiet, but you can’t hear it at all once the crowd arrives. The staff works in a very tight space behind the counter, so we have to be careful not to bump into each other. We don't have much in the way of decoration, just a few framed pictures and the menu board. It’s a fast-paced environment where nobody stays for very long. We focus on keeping the pace up and the counters clean. By the time we close at night, our backs usually ache a bit, but it’s just part of the routine. We lock the doors and head home tired every single day.
