Snakart Steamed Momos In Kiosk Trolleys

You can find our Snakart trolley right in Koramangala 5th Block, parked at the Nilgiries and just across from the Nandana Hotel. It’s not a permanent building or anything, just a kiosk on wheels that we set up every day. The steam comes out of the big aluminum pots and you can see it from down the street when the sun starts to set. Koramangala is always moving, and we fit right in with that. People walking home from their offices or students from the nearby colleges stop by for a quick plate. There isn't any place to sit, so everyone just stands around the trolley or leans against the wall nearby. We keep the chutney in big plastic containers and we’re always refilling the small steel bowls. It’s a bit of a rush from six to nine in the evening. Sometimes the wind blows the steam towards the customers, and we have to adjust the pots. We don't have a huge kitchen, just the space inside the trolley to keep the momos hot and the plates ready. It’s a simple setup. We spend the mornings preparing the fillings and folding the dough by hand. It’s a lot of repetitive work, but we’re used to it. When the rain starts, we have to pull the plastic sheets over the top to keep everything dry. It’s a small business, and we just focus on keeping the steamer going for the evening crowd until the last batch is sold.
