Down at Nagashettyhalli Whitefield Road 25, we start our work while most people are still sleeping. Raj Pork Shop is a straightforward place. We get the meat in early, and then the cutting and cleaning begins. It’s hard work, and you have to be careful with the tools. The shop at number 25 is basically a big front counter and a cold storage area in the back. We spend a lot of time making sure everything is scrubbed down and sanitary. Whitefield Road is always busy, so we get a lot of people stopping in on their way home. We know most of the regulars by their names and what they usually like to buy. It’s a very hands-on job. There isn't much time for sitting around. Usually, by the time the lunch hour hits, we’ve already done a full day’s work. We don't have any fancy signs or big displays. People just know us for being in Nagashettyhalli for such a long time. Sometimes the supply is a bit short, and we have to tell people to come back tomorrow, which is never fun. But that’s just the nature of the business. We keep the shop open until the stock runs out or it gets too late. It’s a simple life, focused on the shop and the neighborhood, and we wouldn't have it any other way. We just keep the knives sharp and the floor clean.
