New Shahi Mutton Stall

New Shahi Mutton Stall is right on the Palace Guttahalli Main Road. We are at number 24 in the Nagappa Layout part of Shivaji Nagar. It’s a very loud spot because of all the buses and cars going past the front door. We open up early, usually while it’s still dark out. The meat arrives on the hooks and we have to get to work straight away. There’s four of us working here most days. We use heavy wooden blocks that have deep grooves from years of use. It’s a messy job, and our aprons are never clean for long. People from the layout come in with their own bags, wanting specific pieces for their Sunday lunch. We don’t have much room for people to sit, so they just stand around and talk while we work the knives. The fans on the ceiling are old and they wobble a bit when they’re on high speed. We’ve been in this part of Shivaji Nagar for a long time now. We know the routines of the street, like when the tea seller comes by and when the traffic gets at its worst. It’s a hard job on your feet all day, but we’re used to it. We don't do any delivery or anything like that. If you want something, you just come down to number 24 and wait your turn. We usually pack up once everything is sold out.
