We start early at Kushi Mutton Stall. The shop is on Kasturba Road, right near Rajendra Nagar. Most mornings, the truck comes in around five or six. It gets loud out there with the crates banging. I usually have my coffee before we start the prep work. It's a small place, nothing fancy at all. We have the usual heavy wooden blocks and the sharp knives we use every day. People come in from Rabrindranath Tagore Nagar after they finish their morning walk or before they head to the office. We just focus on getting the meat ready for the day. Sometimes the floor gets a bit messy with sawdust and scraps, but that's how it is in a butcher shop. We’ve been at number 61 for a while now. Most of our regulars know our names and we know theirs too. They don't ask for much, just their usual cuts of mutton. It’s not a quiet job. The chopping sound goes on all through the afternoon. When the sun hits the road outside, it gets quite warm, so we keep the old fans running on high. We don't really have a big sign or anything, just the name painted on the board above the door. My cousin helps out on the weekends when it gets crowded. We mostly just talk about the weather or the local news while we work. It’s a simple life here in the neighborhood. We close up once the stock is gone. Some days are faster than others. It really depends on what people are cooking.
