Down here at Basaveshwara Nagar on VIP Road 729, things get pretty loud especially on the weekends. It’s a lot of chicken and a lot of frying. The smell of oil stays on your clothes long after you finish your shift. We spend most of our time in the back getting things ready or out front trying to keep the lines moving. The floor gets greasy if we don’t mop it every hour, so we’re always carrying a yellow bucket around. The tables are that hard plastic that’s easy to wipe down after a family leaves a mess. It’s not the kind of place where you stay for hours. You come in, eat, and go. We have the AC running hard. The fryers make the kitchen area really hot. Sometimes the soda machine acts up and only gives out bubbles. We have to fiddle with the canisters in the back. The parking outside is a nightmare. We see people running in while their friends wait in the car with the engine idling. It’s a busy spot. We just focus on getting the buckets filled. We try to make sure the fries aren’t sitting there too long. It’s practical work. We don’t have time for anything else. The bins fill up fast. We’re always taking the trash out to the back gate when the sun goes down.
