Our location is right at Richmond Circle on Brigade Road, number 4. If you know Bangalore, you know this is one of the loudest and most crowded parts of the city. There’s always music, horns honking, and people shouting outside. Inside the shop, it’s a different kind of noise. It’s the sound of the fryers bubbling and the fans humming. We spend our shifts in the back mostly, dealing with the chicken and the flour. It’s physically demanding work and your arms get tired by the end of the day. We see all kinds of people here since Brigade Road attracts everyone from tourists to local students. The lunch rush can be pretty overwhelming. You just see a wall of people waiting for their food. We don't have any fancy mission statements or anything. We just try to get the orders out as fast as the fryers allow. The tables get messy fast because people are always in a rush, so someone is usually out there with a spray bottle and a rag. It’s a tough location because it’s so busy, but it keeps us on our toes. By the time we lock the doors at night, we’re usually pretty worn out. It’s just how it is working in such a central part of town. We’ll be back tomorrow to do it again. It is a long day every single time.
