Fredes

Fredes is a little spot located in Kalyan Nagar, Chembur Colony 732. We’ve been operating out of this small building for quite some time. It’s mostly just a few of us here every day, doing the same routines. We open up the shutters around nine and start getting everything set up. The neighborhood is fairly quiet in the mornings, which is nice. You can hear the birds and the occasional scooter going past. By lunchtime, it picks up and we get a bit of a rush from the people working in the nearby offices. We don't have a huge kitchen, so we have to be very organized to make sure we don't get in each other's way. The counter is made of wood and has a few scratches from years of use. We don't bother covering them up because it gives the place some character. Sometimes the delivery truck is late and we have to scramble to find ingredients from the local market down the road. It’s a bit of a headache when that happens, but we make it work. The curtains in the window are a bit faded from the sun, but they do the job of keeping the glare out. We don't have any big slogans or marketing plans. We just show up, cook the food, and chat with the regulars who come in every day. It’s a steady life and we like the people around here.
