Dakshin (ITC Windsor Hotel)

Our kitchen is located inside the ITC Windsor Hotel at Windsor Square. We are right on Golf Course Road, near the corner where it meets Sankey Road at number 25. Even though we are part of a big hotel, the way we cook is very traditional. We spend a lot of time grinding spices and getting the masalas just right. The dining room has a lot of dark wood and old-style lamps to make it feel more like a home. We focus on food from the southern states, like what you’d find in people's houses. Our chefs have been doing this for a long time, and they don't like to take shortcuts. You can hear the sound of the appam pans clicking in the kitchen if you sit close enough. Bangalore 560020 is a busy area, but once you come through the hotel gates, it gets much quieter. We have a lot of regular guests who come here for special family meals. We don't use any modern fusion tricks; we just stick to the old recipes. The staff here knows the menu by heart and can tell you what goes into every dish. It’s a formal place, but we try to make it feel welcoming. The view of the greenery around the golf course is nice in the evenings. We just want to serve a good meal that reminds people of where they grew up.
