Our daily routine at Daily Bread Gourmet Foods (India) Pvt Ltd starts way before most people are awake. We are located at Bommanahalli Kandivali West 671/672, and the ovens are usually humming by four in the morning. The air inside always smells like yeast and baking dough, which is something you never really get tired of. We spend our hours mixing large batches of flour and making sure the temperature is just right for the bread to rise. It is a physical job with a lot of lifting heavy sacks and moving hot trays around the kitchen. We have flour on our aprons and sometimes in our hair by the time the sun comes up. The building at 671/672 is more of a production space than a place for people to sit and eat. We focus on getting everything baked and packed so it can go out to the different delivery points. Sometimes things get a bit disorganized when we have a big order for a party or a local event, but we always manage to figure it out. We do not use a lot of fancy machines; a lot of what we do is still done by hand. It is just the way we have always done it here in Kandivali West. We have a small team and we all know our roles. We drink tea during the short breaks and then get right back to the next batch of dough.
