You can find us over on Castle Street in Ashoknagar, sitting on the ground floor of building number 45. This part of Bangalore has a different feel than the rest of the city, maybe a bit more tucked away but still plenty busy. We spend our mornings getting the kitchen ready, which usually involves a lot of chopping and prepping before the lunch crowd starts to arrive. The building itself is an older one, and you can tell by the way the windows fit and the odd layout of the back rooms. We don't have a lot of space, so everything has to be kept in its right place or we’d never get anything done. There’s a lot of steam and noise in the back once we get the burners going. We try to keep the front area looking decent, though the street outside can be a bit messy with construction or traffic most days. It’s a lot of running back and forth from the kitchen to the tables, especially when the evening shift starts and the streetlights come on. We aren't doing anything revolutionary here; we just show up, do the work, and make sure everything is put away properly at the end of the night. It's a lot of hours on our feet, but the neighborhood is okay and we like the people who stop by after work to eat.
