Aila Cateres & Services

Aila Cateres & Services operates out of Ejipura 5. This is a small place where we handle a lot of cooking and food prep for people in the area. Most days start very early, usually before the sun is even up, because the supplies need to be sorted and the stoves need to be lit. We do a lot of local events, small parties, and stuff like that. It’s a lot of heavy lifting with big pots and pans. The kitchen gets really hot in the afternoons, but that is just part of the job. We don’t have a fancy menu with things you can't pronounce. It is just regular food that people like to eat at gatherings. We spend a lot of time cleaning up after ourselves because food work is messy. Ejipura is a crowded spot, so getting our delivery van through the narrow streets can be a bit of a headache sometimes. We have a few regulars who have been coming to us for years. We just write down the orders in a big notebook and make sure we don't forget the salt. It isn't a high-tech business. It’s just about getting the flavors right and making sure there is enough for everyone to eat. We show up, we cook, we serve, and then we head back to Ejipura 5 to start prepping for the next day. It keeps us busy and out of trouble.
