Koyla DUM Biryanis & Kebabs

Our little shop, Koyla DUM Biryanis & Kebabs, is situated at No 12 in the Cidco Colony of Aurangabad. We are part of the Mini Shop Cannought Garden area. It is a lively neighborhood and we have been here for a while now. The main thing we do is biryani and kebabs, keeping it simple without a lot of extra items that we can't manage. I usually get to the shop early to start the slow cooking process for the biryani because you can't rush that kind of thing. The address says Mini Shop and it really is quite small, so a lot of our customers just take their food to go. When the sun goes down and the weather cools off, the area around the garden gets really busy with locals. We stay open until the pots are empty. Sometimes that happens earlier than we expect if it’s a holiday or a busy Friday. We aren't part of some big chain of restaurants; it's just a local business run by people who live right here in the colony. We try to keep our prices fair so that the students and workers nearby can come in often. The kitchen is basic and we don't use any fancy machines, just traditional ways of cooking over heat. It’s a lot of standing on your feet all day, but seeing the same faces every week makes it worth it for us in the long run.
