Our shop sits on Plot No 12 along Cannought Garden Road in the CIDCO Colony area of Aurangabad. We are quite close to the More Super Market, which makes us easy to spot. It’s a nice enough spot in a part of town that has grown a lot lately. Moving into this neighborhood meant we had to figure out what the locals here liked while keeping our own way of cooking. The building is simple, and we haven't done much to it other than keeping it clean and making sure the kitchen equipment works like it should. We spend a lot of our mornings prepping the ginger, garlic, and onions. There is a lot of chopping involved before we even start the actual cooking. The staff is mostly local guys who have been with us since we opened this branch in Maharashtra. We don't have a big marketing plan or anything fancy; we just put the sign out and started cooking. Sometimes the power goes out and we have to scramble to keep things moving, or the water delivery is late, but that’s just part of running a shop in CIDCO. We see a lot of shoppers from the supermarket stopping in because we are so close. It’s a straightforward operation where we just focus on getting the food out to the tables without too much fuss. We stay busy and that is enough for us.
