Chaudhry Dhaba

We've been here in Aligarh for a good while now. Chaudhry Dhaba is just a simple place where people come to eat when they're hungry. We don't have fancy lights or chairs, just tables and food. It stays busy most days because folks around 202001 know what to expect. Sometimes the noise gets a bit much, especially during lunch, but that is how it is. We start early in the morning. My brother and I handle most things ourselves. If the curry is a bit spicy one day, it’s because the chilies were strong that morning. We don't use big machines to cook. Everything happens in the back kitchen. You can see the steam coming out from the big pots. People stop their trucks or bikes and just sit down. It isn't a place for a quiet date, really. It’s for eating and then getting back to work. We clean the tables fast so the next person can sit. The floor gets dusty since we are right by the road. We just keep the fans running. It is what it is. We don't change the menu much because people like the old stuff. You come in, you eat, you pay at the counter near the door. That is the whole story of our place here. Nothing more to say about it. Just a regular spot for regular people. We have been here for years and the roof leaks a tiny bit when it pours, but we put a bucket there and keep going. That’s just life here.
