Our place is located out in Seesali, within the Kalla Mandalam area. Being a seafood company, our whole schedule depends on what comes in from the water that morning. Some days are incredibly hectic when the catch is big, and everyone has to jump in to get everything processed and iced down quickly. The air in Seesali always has that salty, fishy smell to it, which we have all grown used to over time. It is definitely not a city job. We spend a lot of time checking temperatures and making sure the packing is done right so nothing spoils during transit. The facility isn't fancy, just a lot of cold storage rooms and tiled floors that get hosed down constantly to keep things clean. We have a lot of local folks from around the Mandalam working here. They know their way around fish and prawns better than anyone else. There is a lot of manual labor involved, from unloading the heavy crates to sorting through the different sizes by hand. It is wet and cold work most of the time. We do not have much of an office presence because the real work happens on the floor where the ice is kept. Sometimes the weather makes things difficult, especially during the monsoon season when the boats can't go out, but we manage to keep things moving. It is just how it goes when you are dealing with something as unpredictable as the sea and fresh food. We just stick to the routine.
