Our mill is right in the middle of the chaos at Kabutar Khana in Kalupur. Being in Chokha Bazar means there is never a quiet moment. At Plot No. 51/1, we are surrounded by other traders and wholesalers all day long. The streets are so narrow that getting the trucks in and out is always a headache. We spend our days managing the machines that clean and split the dal. It’s a dusty environment, and everyone usually ends up with a thin layer of flour on their clothes by the time evening rolls around. We’ve been here at Jai Jagdish Dall Mill for quite a while, and even though we are a private limited company on paper, it feels more like a small family operation. We have a few workers who have been with us for over ten years. They know exactly how the old machines sound when something is wrong. We don't spend money on fancy brochures. Most of our business happens through word of mouth or long-standing relationships in the bazaar. When the market is busy, we are working from dawn until well after dark. It’s cramped, loud, and sometimes the traffic in Kalupur makes us want to pull our hair out, but this is where the business is. We just keep our heads down and make sure the dal we produce is what people expect from us.
