Tho Bhai Paneer Vale

We are Tho Bhai Paneer Vale, located at number 1 on the Nangloi Najafgarh road. This place is usually damp and smells like fresh milk. We spend our mornings getting the dairy ready. Most people come here for the paneer, which we make fresh every day. We don’t have a fancy storefront with glass displays. It’s just a counter, some large containers, and the sound of water running. It’s a very hands-on job. Our clothes usually have a few splashes on them by the end of the shift. The road outside is always busy with trucks and buses going between Nangloi and Najafgarh. It gets quite dusty, so we are always cleaning the counters. We’ve been doing this for a long time, and the locals know when the fresh batch is ready. We don’t do any big marketing or anything. If the paneer is soft and tastes right, people come back. That is our only plan. Sometimes it gets a bit chaotic when too many people show up at once, and we have to scramble to weigh everything and wrap it up in plastic. We have a small bench for people to wait, but most just stand around and chat. It’s a simple life. We start early, work hard, and go home when the stock is finished. The floor can be a bit slippery, so we have to be careful when we are carrying the big milk cans. We don't have fancy uniforms, just regular clothes.
