We are over here in Janakpuri Prem Nagar 71/92. It is a small place honestly. Most days it smells like mustard oil and vinegar. We have these big glass jars lined up on the wooden shelves that my cousin helped me put up years ago. They aren't perfectly straight but they hold the weight. We spend a lot of time washing lemons and cutting up mangoes. It’s messy work. Your hands stay yellow from the turmeric for days. The floor is made of old stone and it’s seen a lot of spills. We don’t have a fancy sign or anything, just the name painted on the shutter. People from the block come in mostly. They know we are usually in the back room if the front looks empty. We don't use big machines, just our hands and some basic tools for the mixing. Sometimes the heat in the afternoon makes the shop feel a bit cramped but we keep the fan running. There is always a stack of empty containers near the door waiting to be filled. It isn't a high-tech operation at all. We just sit on the stools, talk about the weather, and keep the jars moving. It’s been this way for a long time and we don't plan on changing much. The address is easy to find if you know the lane. We are just a regular part of the market here, trying to keep the jars full and the counters clean enough to work on.
