Pankaj Paneer Wala

Pankaj Paneer Wala is located right in the middle of Keshopur Village, very close to the Mandi. It’s a very busy and crowded place, especially in the early hours of the morning when the fresh milk delivery arrives. My family has been involved in this trade for a long time. We specialize in making paneer, as you can probably guess from the name. It is a lot of physical work involving big vats of milk and using heavy weights to press the cheese. The shop itself isn't much to look at from the outside. We just have a simple counter and the main processing area in the back where we do the work. We don't have any fancy packaging or big brand labels on our products. We just make the paneer fresh every single day and sell it directly to the people and small restaurants around the Mandi. You can always smell the fresh dairy in the air when you walk past our door. It’s a bit of a humid place inside because of all the steam and the water we use for cleaning. We don't really do any kind of formal marketing. People around here just know that Pankaj is the one to go to if they want fresh stuff for their meals. We have to wake up while most of the city is still fast asleep to get things ready. It’s a tough routine, but you get used to the early hours. Sometimes the Mandi gets so crowded with people and carts it is hard to walk.
