India Dairy is located at Hari Nagar Gandhi Market A 3. Our day starts way before the sun is up, usually around 4 or 5 in the morning. That’s when the milk trucks arrive and we have to unload the crates. We deal with fresh milk, curd, paneer, and sometimes other dairy products like butter or cream. The shop has a lot of stainless steel and heavy-duty fridges to keep everything cold. Gandhi Market is a lively place, and by 7 AM, we usually have a line of people waiting for their daily supply. The floor is often wet because we’re constantly cleaning up spills or washing down the area to keep it hygienic. You’ll see big aluminum cans sitting around and the smell of fresh milk is everywhere. We spend time cutting blocks of paneer into smaller pieces and weighing them for customers. It’s a very routine kind of job. We have to keep a close eye on the temperature of the coolers because if the power goes out, it’s a big problem for the stock. We aren’t a big factory; it’s a local dairy where people know they can get their basics. The evenings get busy again when people are heading home and need milk for tea or dinner. After the last customer leaves, we do one final scrub of the counters and get ready to do it again tomorrow.
