Guru Kirpa Dairy

Vikaspuri is a quiet enough place compared to the rest of the city. We are located at DG III-281. Guru Kirpa Dairy is basically where the day starts early. I’m usually here before the sun is even up to take the milk delivery. The crates make a lot of noise on the pavement. We spend the first few hours checking the temperatures and getting the curd set for the day. It’s a lot of lifting heavy cans. The fridge hums constantly in the background. People start coming in around seven for their morning tea supplies. It’s mostly the same faces every day. We know who wants the full-fat milk and who is looking for paneer. The shop is small and stays cool because of the refrigeration. We keep the floor wet sometimes to keep the dust down. By midday, it slows down a bit, and that’s when we clean the counters and reorganize the butter packets. There’s always a cat hanging around near the back, hoping for a spill. We don't mind. The evenings get busy again when people are heading home from work. They pick up snacks or extra milk for the next morning. It’s a steady rhythm. We don't have a lot of space for sitting, so we just stand and serve. By the time we close, the legs are pretty tired, but it’s okay. We just do our bit to make sure everyone has their essentials for the next day.
