China Fort

We are located at B-8 in the Community Centre of B-Block, Janakpuri. This part of Delhi is always moving, and the community centre is a hub for everyone living nearby. China Fort has been in this spot for a while now. The building is a standard concrete structure, nothing special to look at from the outside. Inside, we have set up the kitchen and a few tables for the people who come in. Delhi weather is tough, so we are either dealing with the freezing cold in the winter or the intense heat in the summer. We have a couple of old AC units that try their best, but the kitchen heat usually wins. Our day starts with deliveries coming in through the back door. We check the vegetables and the meat to make sure everything is okay for the day's cooking. The counters are made of stainless steel and they have plenty of scratches from years of use. We don't have any music playing or fancy lighting. It is just a place where people come when they are hungry. In the evenings, the community centre gets crowded with families and young people hanging out. We stay busy during those hours, moving between the stove and the packing station. It is a lot of hard work and long hours, but it is what we know how to do. We close up once the crowds start to thin out late at night.
