Back To Veg

We are over at the Janakpuri District Centre, specifically in block B 1. It’s a place where we do a lot of vegetable chopping and stirring big pots. The kitchen is visible enough that you can see us working if you stand by the counter. We don’t have any meat in the building, so it’s all about whatever vegetables we got in that morning. The district centre is a busy spot with lots of people walking around between the different offices and shops. We spend a lot of time just keeping the place tidy, as people are always coming in and out. The tables are simple and we don’t use any fancy tablecloths or anything like that. It’s mostly just about getting the food onto the plates. We have a few regular people who come in every single day at the same time, which is nice. Some days the air conditioner struggles a bit with the heat from the stoves, but we just open the door for a bit to get some air. We don't have a big marketing team or anything; it's just a few of us making sure there is enough food for the lunch crowd. The afternoon is usually the time we sit down for a minute and check the inventory for the next day. It’s a straightforward job in a busy part of town and we stay until the evening.
