Egg Donald is located right by Channi Naka. If you know the area, you know it’s a spot that’s always got something going on. We deal with eggs mostly, and we go through a lot of crates every single week. The stove is almost always on, and the smell of fried eggs is just part of the air here. It’s a small place, so most people end up standing outside or taking their food to go. We have a couple of stools, but they are usually taken. We start our day by getting fresh supplies from the market and setting up the counter. Channi Naka gets very busy in the evenings with people heading home from work, and that’s when we are the most active. It’s a lot of cracking eggs, whisking them in metal cups, and throwing them onto the hot tawa. We don't have a big menu, just the things we know how to make well. The lighting inside isn't the brightest, and the walls have a bit of soot from the cooking, but it’s a real working kitchen. We’ve had the same people working here for years, so we all know the routine perfectly. We don't do any big promotions or online stuff. People just know where the Channi Naka egg spot is and they come find us when they are hungry for a quick bite. It’s a simple life at Channi Naka, but it keeps us busy and we like the rhythm of the cooking and the cleaning that goes on until late at night.
