Ambica Masala Mill

Ambica Masala Mill is tucked away at E-40 in the Apmc Market Yard over in Hathikhana, Fatehpura. Being in the market yard means we are right in the middle of all the wholesale action. From early morning, the place is full of sacks being dragged around and people shouting out prices. In our mill, the air is always thick with the smell of spices—chili, turmeric, coriander, you name it. It makes you sneeze if you aren't used to it. We spend our days feeding dried spices into the mills and watching the powder come out the other side. It’s dusty work, and we all wear scarves over our faces to keep from breathing too much of it in. We’ve been in this unit for years, and the machines have their own quirks that only we understand. We don't have a big marketing team or anything like that. People know us because they see our sacks in the market or they've been buying from us for a generation. The work is hard on the back and the lungs, but there’s a satisfaction in seeing the bright colors of the fresh masalas. We keep things moving, filling orders for local shops and sometimes for people who just want a small bag for their own kitchen. It’s a busy, noisy, spicy life here in Fatehpura, and we wouldn't know what to do with ourselves anywhere else.
